Peal and halve peaches. Add olive oil to coat each half and grill on BBQ.
Remove from heat and slice peaches.
On a side plate, start layering the cheese, tomato and sliced grilled peaches.
Drizzle olive oil and peach balsamic vinegar over the top of the salad.
Sprinkle with basil leaves.
Add salt and pepper if desired.
