This refreshing chopped salad was so tasty, my girls and I were fighting over the last serving. If you’ve never had jicama, it’s a slightly sweet, mild flavored, very moist and very crunchy root vegetable from Mexico. It’s also very high in fiber and Vitamin C. I can buy precooked barley in the freezer section of my grocery store. If you can’t find the precooked variety, I share simple cooking instructions below.

Wow does this sound good! I’m definitely trying this. I love feta on ANYTHING. Yummmmm!

I tried this without the green chiles and (accidentally) without the lime juice. I still liked it! I think some great olives or a little red onion would also be good additions.

This was a great way to use up some garden veggies and herbs! It had a nice variety of flavors as every bite was a mixture of sweet and savory. Loved it and would make it again!

I made this salad for a summer bbq, and boy! everyone loved it…
I did make a tiny change to the recipe, instead of using a can of Green Chilies, i used a fresh jalapeno amd also added a bit of cilantro. This made the salad taste a lot more fresh…overall a great recipe! i would definetly recomend it

I made this salad a couple of times over the summer. I was trying to find new ways to use all of the zucchini I had. I really loved it. One tip though, if you use lowfat or fat free feta you shouldn’t add any salt, it’s just too much. I feel like lowfat/no fat cheese is always saltier than the regular.
