Description

Traditional, but better.

Ingredients

  • FOR THE FETA VINAIGRETTE:
  • 1  Medium Lemon, Zest And Juice
  • 2 Tablespoons Red Wine Vinegar
  • 2 cloves Garlic, Peeled And Minced
  • 1 Tablespoon Granulated Sugar
  • 1 teaspoon Honey
  • 1 teaspoon Dried Oregano Leaves
  • ½ teaspoons Dried Basil Leaves
  • ½ cups Extra Virgin Olive Oil
  • Coarse Salt And Ground Black Pepper
  • ¼ cups Crumbled Feta Cheese
  • FOR THE SALAD:
  • 3 heads Romaine Lettuce, Chopped
  • 1 whole English Cucumber, Sliced
  • 1 whole Green Bell Pepper, Thinly Sliced
  • ½ pints Cherry Tomatoes
  • ½ cups Pitted Kalamata Olives
  • ½ cups Crumbled Feta Cheese
  • Coarse Salt And Ground Black Pepper
  • ¼ cups Shaved Parmesan Cheese
  • Whole Pepperoncini, For Garnish (optional)

Preparation

For the vinaigrette, whisk together lemon zest and juice, vinegar, garlic, sugar, honey, oregano and basil. Drizzle in olive oil until combined. Season with salt and black pepper and taste; adjust seasoning if necessary. Whisk in feta cheese. Set aside.

For the salad, in a large bowl, combine romaine lettuce, cucumber, bell pepper, tomatoes, olives and feta cheese. Toss with desired amount of dressing. Sprinkle with coarse salt and black pepper and top with Parmesan cheese and garnish with pepperoncini, if desired.

Oh my ~ this was absolutely delicious! I always try to follow directions to the letter when using a recipe for the first time, but we had an abundance of all the veggies for this but NO lettuce in the house. So I made this without lettuce and than that, it was followed to the letter. It is AMAZING. But next time, I will add the Romaine. Thanks so much for this inspiration!!!!
