Description

A salad that is full of taste and protein!

Ingredients

  • FOR THE SALAD:
  • ¾ cups Quinoa
  • 1-¼ cup Water, Plus More To Soak Quinoa
  • ¼ teaspoons Salt, Plus More To Season Salad
  • 4 whole Small Cucumbers, Large Diced
  • 1-½ cup Grape Tomatoes, Halved
  • 1 whole Yellow Pepper, Diced
  • 1 whole Green Pepper, Diced
  • ¾ cups Feta Cheese, Crumbled
  • Pepper To Taste
  • FOR THE DRESSING:
  • ⅓ cups Olive Oil
  • 3 Tablespoons Red Wine Vinegar
  • 1 sprig Oregano, Chopped
  • Salt And Pepper, to taste

Preparation

Soak quinoa in some water for 5 minutes. Drain and rinse. Add quinoa with the water and salt to a small saucepan cover and bring to a boil; reduce heat and simmer for 15 minutes. Let rest for 5 minutes. Fluff with a fork and let cool.

Meanwhile, mix vegetables together. Shake dressing ingredients in a jar. Mix quinoa with the vegetables and add crumbled feta, additional salt and pepper to taste. Be careful, as feta is salty. Pour dressing over the salad and toss. Adjust seasoning.

Refrigerate for 1-2 hours and serve.

OMG. So good. I added in chopped kalamata olives too (I love salty things). It was such a hit! Makes a lot but you’ll be glad for that! Thanks!
