Description

Craving Greek food? If so, then this healthy vegetarian Greek Orzo Salad is just for you!

Ingredients

  • FOR THE SALAD:
  • ½ cups Orzo Pasta, Uncooked
  • ½ whole Cucumber, Diced
  • ¼ cups Red Onion, Diced
  • 1 whole Roasted Red Pepper, Diced
  • ½ cups Tomato, Diced
  • 1 Tablespoon Flat-leaf Parsley, Chopped
  • ¼ cups Kalamata Olives, Chopped
  • ⅓ cups Feta Cheese, Crumbled
  • FOR THE DRESSING:
  • 1-½ Tablespoon Extra Virgin Olive Oil
  • ¼ cups Red Wine Vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon Mustard
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Freshly Ground Black Pepper
  • ¼ teaspoons Garlic Powder
  • ½ teaspoons Dried Oregano
  • ½ teaspoons Dried Basil

Preparation

Cook the pasta according to the directions on the box, omitting oil if it calls for it. Drain the pasta and let it cool.

For the dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, honey, Dijon mustard, salt, pepper, garlic powder, oregano, and basil and set aside.

For the salad: Pour the orzo into a bowl and add in all of the chopped vegetables and the feta cheese. Pour the dressing over the salad and toss until everything is combined.

Serve immediately or chill in the fridge.

The dressing recipe was slightly adapted from My Baking Addiction.

Delicious! Thanks for the great recipe. If you are taking this to a gathering i would double the ingredients but not the dressing.

We love this salad! So flavorful and healthy too (minus the carbs from pasta) But hey, it’s so good.
