Description
Grape Spinach Zucchini Harvest Salad.
Ingredients
- FOR THE SALAD:
- 3 cups Baby Spinach
- 5 Zucchini, Sliced Into Matchsticks
- 2 cups Red Grapes, Sliced In Half
- 2 cups Strawberries, Sliced In Half
- 2 Radishes Roughly Chopped
- ¼ cups Pumpkin Seeds
- ¼ cups Sunflower Seeds
- FOR THE DRESSING:
- ¼ cups Chives, Finely Chopped
- 2 Tablespoons Olive Oil
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Balsamic Vinegar
- 1 Tablespoon Honey
- Salt And Pepper, to taste
Preparation
Place all salad ingredients in a large mixing bowl and toss.
Whisk dressing ingredients. Pour dressing over salad and toss until salad is nicely coated. (Or serve the dressing on the side.)
Serve in a large salad bowl or platter and enjoy!
