Description

One of my favorite salads with tons of flavors and textures.

Ingredients

  • FOR THE SALAD:
  • 4 cups Mixed Greens, Washed And Dried
  • ½ whole Medium Red Onion, Thinly Sliced
  • 1 whole Small Cucumber, Thinly Sliced
  • ¾ cups Walnuts, Toasted
  • 1 whole Granny Smith Apple, Cored And Thinly Sliced
  • ½ cups Raisins
  • ¼ cups Feta
  • _____
  • FOR THE DRESSING:
  • ½ cups Olive Oil
  • ¼ cups Balsamic Vinegar
  • 1 clove Garlic, Minced
  • 1 whole Lemon, Juiced
  • 1 pinch Sugar
  • Salt And Pepper

Preparation

Add the mixed greens to a salad bowl. Top with the red onion, cucumber, walnuts, granny smith apple, raisins and feta and toss.

Mix the dressing ingredients together in a bowl and serve over the salad.

This is fantastic. I brought it to my book club and everyone wanted the recipe!! I added more feta though…I’m on a feta kick.

I brought this salad to a dinner party this evening and it was well received! If I make it again, I will be adding more feta cheese, but other than that it was really tasty! The flavours complimented each other really well!
