Description

Chicken breast, dried cranberries, cherries, diced apples, grapes—what’s not to love? My children devour this chicken salad filled with chopped fruit and nuts. I serve it in sliced croissants. Yum!

Ingredients

  • 6 whole Chicken Breasts, Shredded
  • 2 whole Apples, Diced
  • 1-½ cup Dried Cranberries
  • 1-½ cup Dried Cherries
  • ¾ cups Chopped Walnuts
  • 2 cups Green Grapes, Halved
  • 2 cups Light Mayonnaise
  • 3 whole Limes, Juiced
  • 1 cup Reserved Chicken Broth
  • Salt, Pepper And Garlic Powder, To Taste

Preparation

You will need to boil your chicken breasts in a large pot of seasoned boiling water. Allow them to cook approximately 15 – 20 minutes for large chicken breasts. Go ahead and set them aside and let the chicken breasts cool and reserve about a cup of the chicken broth.

While your chicken is cooling, dice up your washed and unpeeled apples. I always give the apples a good shot of lime juice to keep from browning. Add the apples to a large bowl along with the cranberries, dried cherries and chopped walnuts. Cut your grapes into halves and add them to the mix as well. After your chicken has cooled, shred it and add it to the bowl as well.

In a separate mixing bowl, I like to add the mayo, lime juice and a bit of the chicken broth to help thin it out and have a smoother chicken salad, not a GOOPY one! After it is thinned to a dressing consistency I pour it over the fruit, nuts and chicken and mix it gently to combine. Be sure to season with salt, pepper and a bit of garlic powder to taste. Serve in buttery croissants and enjoy.
