Description

This is not your typical ambrosia salad—fresh, light and Jell-O and marshmallow FREE! Super simple and easy to make for breakfast, snacking or as a dessert. With only 6 ingredients, how can you go wrong?!

My Momma & I throw this fresh & light fruit salad together as we’re making our holiday meals…and then snack on it throughout the day, the evening, breakfast & lunch the next day…you get the idea. Enjoy!

Ingredients

  • 1 cup Walnuts, Chopped
  • ½ whole Lemon
  • 2 whole Large Bananas
  • 1 whole Navel Orange, Large (2 If Small)
  • 1 cup Coconut Flakes, Sweetened
  • 1 cup Cottage Cheese, Small Curd

Preparation

Chop walnuts roughly. Add to a large bowl.

Peel and slice bananas into 1/4″ thick disks. Add to walnuts.

Squeeze lemon juice over banana slices. This will help to hinder the bananas from browning. Be sure to remove any seeds.

Peel and cube oranges into 1/3″-1/2″ thick cubes. Start by setting the orange so that the core is vertical. Slice vertically in 1/2″ sections. Turn orange 90 degrees. Slice vertical 1/2″ sections again. Lay orange on its side and slice 1/3″-1/2″ slices. Viola! We have cubes! Add to the walnuts and bananas.

Take coconut flakes and break up any clumps. Add to other ingredients.

Stir in cottage cheese, making sure that all ingredients are well incorporated.

Serve immediately or slightly chilled. (Chilling will cause bananas to begin the browning process a little faster. Presentation is not as nice that way.)

If too tart, add granulated sugar or fructose half a teaspoon at a time. If too sweet, add cottage cheese 1 tablespoon at a time.

This sounds yummy ! I have all the ingredients on hand, so I’ll have to try it as I’m doing my Christmas Eve cooking tomorrow.
