Fresh Black-Eyed Pea Salad

Description
Embarrassingly quick to whip up, but irresistibly fresh with clean flavours. Plus, the addition of some black-eyed peas make this salad filling enough that you won’t be left wishing you’d gone for the pizza instead. This would be perfect for a BBQ or a potluck dinner.
Ingredients
- ½ pounds, ½ ounces, weight Black-eyed Peas Cooked And Drained
- 3-⅝ ounces, weight Sweetcorn Kernels
- 2 whole Tomatoes (large), Diced
- 1 whole Red Pepper, Diced
- 1 bunch Parsley, Roughly Chopped
- 1 Tablespoon Olive Oil
Preparation
Add all ingredients to a large bowl and mix well. Serve immediately or refrigerate for up to 3 days.
