Quarter each potato, and then cut each quarter in half in order to get 8 chunks from each potato. Bring a large pot of salted water to a boil and cook the potatoes until they are a tender, but make sure not to over cook until they become mushy. This should take less than 10 minutes but use your fork to test them a few times. When they are done, drain off the water and allow them to cool slightly.
In a large bowl, mix together all ingredients. Season with salt and pepper to taste, and then allow the potato salad to chill for at least one hour before serving.
