Description

This is my favorite pasta salad. It’s colorful in its presentation and full of flavor! I particularly like all the veggies and the dressing.

Ingredients

  • FOR THE PASTA SALAD:
  • 12 ounces, weight Corkscrew Or Rotelle Pasta
  • 1 whole Red Bell Pepper, chopped
  • 1 bunch Scallions, Chopped
  • 10 whole Cherry/grape Tomatoes, Cut In Half
  • 1 cup Black Olives, Pitted, Cut In Half
  • 1 cup Crumbled Feta Cheese
  • 4 leaves Fresh Basil, Minced
  • FOR THE DRESSING:
  • 1 envelope Good Seasons Italian Dressing Mix (make According To Directions On Envelope)
  • 2 Tablespoons Fresh Parsley, Chopped
  • 2 Tablespoons Fresh Basil, Minced
  • 2 Tablespoons Water
  • 1 Tablespoon Dijon Mustard
  • ¼ whole Lemon, Juice From (Or Use Bottled Lemon Juice)
  • ¼ teaspoons Salt
  • ¼ teaspoons Freshly Black Ground Pepper
  • 1 teaspoon Sugar

Preparation

Cook pasta according to directions on package. Drain and rinse with cold water. Prepare all of the vegetables.

For the dressing, prepare the Good Seasons Italian dressing according to the package instructions with vinegar, olive oil and water. Then add the rest of the dressing ingredients. Shake well in a dressing bottle or small tupperware container.

Combine pasta, cheese and vegetables in large bowl. Add salad dressing and toss lightly with minced fresh basil.

Store in the refrigerator in a covered container.

Excellent pasta salad! Very simple and so delicious! I particularly liked the dressing made with the Good Seasons mix. Will be tripling this recipe to serve at the rehearsal dinner the night before my son’s wedding. Thanks!!

I’ve been making this salad for years and just realized that I’ve never left a review! It’s my go to – the first one that I think of when I need to make a pasta salad or that my friends/family will request. Great flavors and it never lasts long at my house! My only change is that I don’t add the olives because my family doesn’t like them, other than that, it’s perfect as is.

This was great!! I made it the night before so all of the flavors could marry. Couldn’t have picked a better pasta salad to make. I love the fact it’s not *JUST* Italian dressing, it has a little twist, a yummy twist. The only thing I did not do was add olives. Me no likey.
