Description

I have no idea why this dressing is called Fantasy but that’s just the way it is. This recipe is a crowd-pleaser with ingredients that get all the men and kids eating lettuce. It pairs well with any Mexican meal.

Ingredients

  • FOR THE DRESSING:
  • 1 cup Miracle Whip
  • ½ cups Ketchup
  • ¼ cups Vinegar
  • ¼ cups Canola Oil
  • ⅓ cups Sugar
  • 2 Tablespoons Taco Seasoning (optional)
  • FOR THE SALAD:
  • ½ heads Iceberg Lettuce, Chopped Or 1 Whole Small Head
  • 2 whole Medium Tomatoes, Diced
  • 2 whole Green Onions, Chopped
  • 2 cups Lightly Crushed Doritos Or Other Cheesy Flavored Tortilla Chips
  • 1 cup Shredded Cheddar Cheese

Preparation

Place the dressing ingredients in a food processor and blend or whisk together well. Add the taco seasoning if you want a spicy salad dressing.

Toss the salad ingredients with dressing to taste and serve immediately. Unfortunately, the leftovers are no good. Fortunately, it will probably all be gone!

I love this mixture of ingredients – yum! Since I’m vegetarian, I can sub some pinto or black beans for a main dish or leave them out for a side salad. The dressing was really, really sweet – way too sweet for me. That’s just me though! It tasted close to Thousand Island, so I’ll bet you could add some taco seasoning to the bottled dressing in a pinch if you didn’t have the ingredients. I’ll definitely make it again (and again) and I’ll probably use Hidden Vally Spicy dressing or Lighthouse Jalapeno Ranch.
