Description

A delicious, Greek-inspired egg salad – without the mayo.

Ingredients

  • 6 whole Large Boiled Eggs, Coarsely Chopped
  • ¼ cups Minced Red Onion
  • ¼ cups Extra Virgin Olive Oil
  • ¼ cups Pitted Kalamata Olives, Coarsely Chopped
  • 2 teaspoons Minced Fresh Oregano Leaves
  • 1 Tablespoon Lemon Juice
  • 1 pinch Salt And Ground Black Pepper

Preparation

Mix all ingredients, including salt and pepper to taste, in a medium bowl and serve.

This has a lot of really good flavors in it, but they don’t meld very well. I taste everything separately in bursts rather than one combined salad. It’s still one of the better egg salad recipes I’ve come across.
