Description

An easy, protein-packed side dish loaded with veggies and protein! Gluten-free and grain-free too!

Ingredients

  • FOR THE SALAD:
  • 5 cups Broccoli
  • ½ cups Artichoke Hearts Marinated In Olive Oil
  • ½ cups Sun Dried Tomatoes In Olive Oil
  • ½ cups Pitted Kalamata Olives
  • ⅓ cups Red Onion
  • ¼ cups Roasted And Salted Sunflower Seeds
  • FOR THE DRESSING:

Preparation

In a large bowl, mix all the salad ingredients.

In a medium bowl, stir all the dressing ingredients. Pour dressing over broccoli and stir to coat well. Cover and refrigerate at least 2 hours, up to overnight, so broccoli can absorb the dressing and develop the flavor.

Devour!
