Description

Dill Pasta Salad pairs well with BBQ and grilled meat and is an easy and surprisingly tasty alternative to potato salad and cole slaw.

Ingredients

  • 2 cups Water
  • 12 ounces, weight Elbow Macaroni
  • 2 cups Coarsely Grated Kosher Dill Pickles (Claussen Is What We Use)
  • 1 cup Mayonnaise (not MW)
  • 1 Tablespoon Dried Dill Weed
  • 1 Tablespoon Ground Black Pepper
  • 1 teaspoon Salt

Preparation

In large saucepan, boil the water. Add pasta and lower heat to medium, cook for approximately 15 minutes or until pasta is al-dente (but not squishy). Remove pasta from pot and drain. Set aside.

Grate the pickles into a large bowl. Add the mayonnaise and last 3 ingredients

Mix pasta into mayonnaise pickle mixture. Refrigerate 1 hour before serving.

Oh my word! This is the BEST pasta salad I’ve ever tasted.

Simple ingredients, minimal prep time and one of the best blends of flavors I’ve tasted. I could eat the whole batch myself…YUM!
