1. Rinse the canned chickpeas, drain, set aside. Thinly slice the green onions. Core and chop the apple.
2. Combine Greek yogurt, mustard, lemon juice, curry powder, salt and pepper.
3. When ready to serve, mix the fresh ingredients with the dressing. Add the cranberries and the crushed peanuts just before serving.
