Description

Fresh from the garden cucumber and tomato salad.

Ingredients

  • 4 cloves Garlic
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Red Wine Vinegar
  • 10 leaves Fresh Basil
  • 5 leaves Fresh Oregano
  • ½ cups Extra Virgin Olive Oil
  • 3 whole Small Cucumbers
  • 2 whole Large Tomatoes
  • ½ teaspoons Sea Or Kosher Salt

Preparation

Mince garlic or press it through a garlic press. Let garlic stand in balsamic and wine vinegars for a few minutes. *Don’t use any garlic which has green sprouts in the center, as the flavor will be bitter.

Wash basil and oregano leaves. Chiffonade both oregano and basil leaves. Add this to the olive oil and allow to stand in oil while garlic marinates.

Meanwhile, prepare salad ingredients. Wash cucumbers and tomatoes. Peel cucumbers and slice cucumbers into 1/4 inch rounds.

With a sharp knife, remove stem and blossom end from tomatoes (a very small amount). Slice tomatoes into wedges, being careful not to crush and lose juice.

Place tomatoes and cucumbers in salad bowl and sprinkle with sea salt or kosher salt.

Combine olive oil mixture with vinegar mixture, whisking together well. Use to dress tomatoes and cucumbers; serve at room temperature.

Options: Add 1 thinly sliced/diced red onion, pitted oil cured black olives and fresh mozzarella or cooked crumbled bacon.

yum! i thought this was a perfect, quick & easy (but super flavorful) summer salad.
i also used cherry tomatoes & added thinly sliced red onion. i’m not even a huge cuke fan, but this definitely will make me eat my cucumbers!!

As shown in above pic we used the small grape tomatoes sliced in half and I cut the cucumbers in smaller pieces this time. This recipe is versatile. Enjoy!!

The basalmic vinegar and garlic were different from other salads like this. It was really good.

i HIGHLY recommend this as a quick & easy (but super flavorful) summer salad.
the only change i made was to add thinly sliced red onion.
definitely lots of possibilites with this salad – i’m definitely going to make it again with feta or mozzarella chunks.

I added a can of black olives, which I quartered, and a 1/2 teaspoon onion powder, since I dislike raw onion but thought the onion flavor would be a nice addition. I also added cooked Israeli couscous — I know that’s a big change, but it didn’t affect the flavor, just added more texture and made this a vegetarian main dish instead of a side. Some mozzarella would be great too — next time I’ll add some — and there will be a next time! My husband LOVES it. He wanted to eat half of it!
