Description

This fresh and crunchy radish salad is peppery and a perfect quick lunch!

Ingredients

  • 10 ounces, weight Radishes, Topped Tailed And Finely Chopped
  • 1 ounce, weight Arugula Leaves
  • 1 ounce, weight Spinach
  • 6 ounces, weight Tomatoes, Cut Into Bite Size Pieces
  • 1 Tablespoon Parsley, Finely Chopped
  • 1 Tablespoon Grated Parmesan
  • FOR THE DRESSING:
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoon Red Wine Vinegar
  • 1 Tablespoon Honey
  • 1 teaspoon Cracked Black Pepper

Preparation

Place radish, arugula, spinach, tomatoes, parsley and Parmesan in a large bowl and toss.

In a jug, mix olive oil, lemon juice, red wine vinegar, honey and black pepper and drizzle over the salad.
