Description

This salad is great in the summertime when you can get fresh corn, tomatoes and basil from your garden or local farmers market.

Ingredients

  • 1 whole Avocado, Chopped
  • 1 cup Tomato, Chopped
  • 2 ears Corn (cook & Cut Off The Cob)
  • 1 dash Salt
  • 1 dash Pepper
  • 1 dash Olive Oil
  • 1 whole Lemon, Juiced

Preparation

When I make this salad I don’t actually use the specific measurements above… they’re kind of guesstimates. Just add til it looks/tastes right. I’ve boiled the corn on the cob and other times have grilled it. Either way works.

Made this several times since my last review …still as yummy as ever! I tried it in fish tacos and it was amazing!
Something so simple and soooo yummy!

This was really yummy with grilled steaks last night. Somewhere I got the idea to add slivers of jalapeno… and lime juice as I didn’t have lemons. Other than that I didn’t mess with it as it was already perfect!!

I added onion and bell pepper. It was a little sour with a whole lemon, so maybe half next time? My family really enjoyed this salad.

I have tried this several times and love the combination of fresh grilled corn, tomatoes and avacado. I have added some slivers of jalepeno and red onion.
Making this again this evening for a company bbq, love this!
