Description

Sweet and tangy dressing over a bean, corn and onion mix. Like three bean salad minus the green and wax beans.

Ingredients

  • 15 ounces, weight Can Black Beans, Drained And Rinsed
  • 1 cup Corn, Frozen Or Fresh
  • ½ cups Red Bell Pepper, chopped
  • 3 stalks Green Onions, Chopped (optional)
  • ½ whole Small Red Onion, Chopped
  • 1 clove Garlic, Minced
  • 1 teaspoon Fresh Basil, Chopped
  • 1-½ teaspoon Salt
  • 1 teaspoon Sugar
  • ½ teaspoons Black Pepper
  • ⅓ cups Red Wine Vinegar
  • ¼ cups Olive Oil

Preparation

1. In a container that has a tight fitting lid, combine beans with corn, pepper, both types of onions, garlic and basil.
2. Whisk together remaining five ingredients to make the dressing.
3. Pour dressing over beans and veggies, tossing to evenly coat everything.
4. Chill in fridge for at least two hours to let flavors fully develop and mingle with each other. Gently shake a few times during the chilling period to keep everything mixing together.
