Cold Quinoa & Veggie Salad

Description
An easy and healthy side dish, snack or light lunch.
Ingredients
- 2 cups Cold Water
- 1 cup Quinoa
- Salt To Taste
- 1 whole Cucumber, Peeled And Chopped
- 1-½ cup Halved Grape Tomatoes
- 1 cup Sliced Low Fat Salami
- 1 cup Cubed Swiss Cheese
- 3 Tablespoons Light Balsamic Salad Dressing (or Any Dressing You'd Like)
Preparation
In a small pot, stir water, quinoa and salt together. Cover and bring to boil. Reduce to simmer until water has been absorbed, about 20 minutes. After it’s cooked, pour into a large bowl to cool slightly. After 5 minutes, pour in chopped veggies, meat and cheese. Toss with dressing and refrigerate until completely chilled. Serve.
