Description

A different spin on cole slaw …. the apples lend a surprise pop of flavor, the jalapeno gives a little heat, and the lime gives a fresh citrus taste sensation.

Ingredients

  • 1 cup Mayonnaise (You Can Use Low-fat)
  • ¼ cups Apple Cider Vinegar
  • 1 teaspoon Fresh Grated Lime Zest
  • ¼ cups Fresh Lime Juice
  • 1 Tablespoon Sugar
  • ⅛ teaspoons Salt
  • ⅛ teaspoons Freshly Ground Black Pepper
  • ½ heads Large Cabbage, Sliced Thin (or 1 Head Napa Cabbage, Thinly Sliced)
  • 2 whole Granny Smith Apples, Peeled, Cored And Cut Into Matchstick Pieces
  • 2 whole Jalapeno Peppers, Seeded And Diced
  • ¼ cups Fresh Cilantro, Chopped

Preparation

In a medium bowl, whisk together mayonnaise, vinegar, lime zest, lime juice, sugar, salt and pepper.

In a separate bowl, combine cabbage, apple and jalapeno.
Pour the dressing over the cabbage mixture; toss to coat.
Cover and refrigerate for at least 1 hour.

Toss in the chopped cilantro just before serving. Makes 6 servings.

I loved this. Such a great change from regular cold slaw. I am a huge fan of spicey food and this just hit the mark!!
