Description

These healthy chopped Greek salad stuffed avocados are a great summer treat for lunch. No cooking involved! It’s a vegetarian recipe with feta cheese, olives, chopped veggies and a delicious Greek yogurt based tzatziki sauce on top. An easy low carb lunch or clean eating dinner you should try today!

Ingredients

  • FOR THE SALAD:
  • ½  Cucumber, Deseeded And Diced
  • 1  Yellow Pepper, Diced
  • ½ pints Cherry Tomatoes, Quartered
  • 1  Red Onion, Chopped
  • ⅓ cups Kalamata Olives
  • 3 ounces, weight Feta Cheese, Cubed
  • ¼ cups Fresh Oregano
  • 1  Lemon, Juice Only
  • 3 Tablespoons Olive Oil
  • Salt And Black Pepper To Taste
  • 2  Avocados, Halved, Pitted And Lightly Scooped
  • FOR THE TZATZIKI SAUCE:
  • ½ cups Plain Greek Yogurt
  • ½  Cucumber, Deseeded And Finely Chopped
  • 1 clove Garlic, Minced
  • Salt And Black Pepper To Taste

Preparation

Combine all salad ingredients (except for avocados) in a large bowl. Toss well.

Stir together all ingredients for the tzatziki sauce.

Fill avocado halves with the salad and top with the sauce. Serve immediately.
