Chipotle Bowl

Recipe Description
A big bowl full of Mexican flavors and spices, made with black beans, corn, chicken, sweet potatoes. Makes for a quick and healthy lunch or dinner.
Preparation Instructions
In a microwave safe bowl add beans, corn and sweet potato and microwave for about 1 minute or until warmed.
In a bowl add the lettuce, tomatoes, chicken, black beans, corn and sweet potato. Top with salsa, Greek yogurt and chips.
Ingredients
- ¼ cups Black Beans, Canned
- ¼ cups Corn
- ⅓ cups Sweet Potato, Cooked
- 2 cups Romaine Lettuce, Shredded
- ½ cups Tomatoes, Diced
- 2 ounces, weight Chicken, Cooked
- 2 Tablespoons Salsa
- 2 Tablespoons Greek Yogurt
- 2 whole Tortilla Chips, Broken Up
