Description

Light, refreshing and ridiculously easy.

Ingredients

  • FOR THE SALAD:
  • 1 whole Romaine Heart, Chopped
  • 2 cups Shredded Cabbage
  • 1 cup Shredded Carrot
  • 1 whole Red Bell Pepper, Stem And Seeds Removed Then Chopped
  • 3 whole Green Onions, Sliced
  • ½ bunches Cilantro, Chopped
  • 1-½ cup Bean Sprouts
  • 1 cup Mandarin Orange Sections (from A Can)
  • ½ cups Toasted Almonds
  • 1 package Ramen Noodles, Crushed, 3 Ounce Package
  • FOR THE DRESSING:
  • 2 cloves Garlic, Finely Minced
  • 1 Tablespoon Grated Ginger
  • 3 Tablespoons Soy Sauce
  • ¼ cups Packed Brown Sugar
  • 2 Tablespoons Sesame Oil
  • 2 Tablespoons White Wine Vinegar
  • ¼ cups Canola Oil
  • Salt And Pepper, to taste

Preparation

Stir all of the dressing ingredients together in a small bowl. Set aside.

In a large bowl, combine all of the salad ingredients and toss with dressing. Top with more almonds and ramen noodles if desired and serve immediately.

*If desired, use a store bought Sesame Ginger Dressing, such as Newman’s Own. Use 3/4 cup dressing if you do this.
*Discard the seasoning packet that comes with the noodles. You don’t use them in this recipe.

Loved this! Lots of great flavors and textures. The dressing was delicious. A nice change from an ordinary tossed salad. Will definitely make again.

Made it yesterday using the Newman’s Own dressing and the whole family loved it! I added some leftover cooked chicken to make it a main dish salad. Will definitely be making this again … thank you!

Hi Lauren-I made a version of your delicious salad last night using what I had on hand. I added leftover cooked turkey breast, come diced English cucumber, sliced celery and sliced fresh snow peas. I also subbed out rice vinegar for the white wine vinegar in the dressing. It was a meal in one-and a delicious one too. I know I’ll be making this again and again-especially this summer with leftover chicken.
