Description

Wonderful light and tangy salad.

Ingredients

  • 2 pounds Cooked Medium Shrimp
  • 14 ounces, weight Canned Artichoke Hearts In Water, Sliced And Drained
  • 2 cups Chopped Celery
  • 14 ounces, weight Canned Hearts Of Palm, Drained And Sliced
  • 1 cup Sliced Green Onions
  • 2 Tablespoons Pesto
  • 2 Tablespoons Fresh Lemon Juice
  • 1 Tablespoon Salt
  • ¼ cups Olive Oil
  • 1 teaspoon Freshly Ground Pepper
  • 1 teaspoon Chopped Fresh Basil
  • 8 whole Large Shallots, Chopped
  • 1 teaspoon Honey
  • ⅛ teaspoons Chili Flakes

Preparation

Combine in a bowl the first 5 ingredients. Mix the rest of the ingredients in a separate bowl and then pour that mixture over the combined first 5 ingredients.

Garnish with fresh parsley and dive in.
