Description

This is a non-traditional slaw that is slightly sweet and tart. It has an incredible crunch. It’s really simple to throw together and is perfect for picnics because it doesn’t contain mayonnaise.

Ingredients

  • 1 package Ramen Noodles (any Flavor But I Prefer Chicken)
  • ½ heads Cabbage Chopped
  • 1 cup Shredded Carrots
  • 3 Scallions, Minced
  • ¼ cups Sunflower Seeds
  • 1 cup Slivered Almonds
  • DRESSING INGREDIENTS
  • 2 Tablespoons Sugar (but I Often Add 3 TBSP)
  • 3 Tablespoons White Vinegar (but I Often Add 4 TBSP)
  • Seasong Packet From The Ramen Noondles
  • ½ cups Vegetable Oil

Preparation

Break up the ramen into small pieces and add them to a large bowl. Add the cabbage, carrots, scallions, sunflower seeds, and almonds. Stir to combine.

In a small bowl, add the sugar, vinegar, and seasoning packet from the ramen noodles then whisk to combine. Slowly add the oil while continuing to whisk vigorously.

Add the dressing immediately before serving and stir to combine. If you add the dressing too early, the salad may lose its wonderful crunch.
