Brussels Sprout Cranberry Salad

Description
This recipe is so bright and green and happy, it just says, “spring.” Hubby started eating this before I had it on the table and I almost didn’t have enough left to photo. Needless to say, it passed the hubby test!
Ingredients
- 2 cups Shredded Brussels Sprouts (I Use A Mandoline)
- 1 cup Dried Cranberries
- 1 cup Sliced And Halved English Cucumbers, Unpeeled
- 1 cup Fresh, Frozen Or Rehydrated Peas, Uncooked
- ½ cups Sliced Onions
- ½ cups Alfalfa Sprouts
- Fruity Vinaigrette Of Your Choice, For Dressing
Preparation
Toss the ingredients together. Dress with a fruity vinaigrette (I used Maple Grove Farms of Vermont Cranberry Vinaigrette).
