Description

This slightly lightened version just screams summer BBQ-ing and picnics.

Ingredients

  • ½ cups Mayonnaise
  • 1 Tablespoon Rice Vinegar (but Apple Cider Would Be Nice Too)
  • 1 Tablespoon Sugar
  • 5 cups Extra Small Broccoli Pieces
  • 3 strips Bacon Broken Up Into Pieces
  • ½ whole Chopped Red Onion
  • ½ cups Sunflower Seeds
  • ½ cups Cranberry Or Raisins

Preparation

Mix mayonnaise, vinegar and sugar in a large bowl. Add broccoli and toppings. Mix well. Refrigerate for at least an hour before serving.

I made this last night, and it was yummy! I’ve been looking for different ways to eat more veggies, and this was perfect. I might leave out the red onion next time, since I’m not a fan of raw onion (and I left out the raisins this time for the same reason). I also added a couple of tablespoons of grated cheese, and that was a nice addition. I’ll definitely be making this again, thanks for the recipe!

This is so good, thanks for sharing this recipe. My husband doesn’t like broccoli, but he tried it and really likes it. My kids like it too.
