Loaded with light and fresh flavors, Chicken Pho is a fun twist on the same-old-same-old bowl of chicken noodle soup. The broth is best made ahead of time, in either a slow cooker, or on the stove top. Then allow it to cool completely and skim off any congealed fat. The poached chicken and rice noodles can also be made ahead for time saving purposes.

A perfect salad for a crowd. Pasta and broccoli in a creamy dressing, loaded up with lots of other goodies! It is easy to cut in half if you’re not serving a crowd.
Cook the pasta in boiling salted water, drain and rinse with cold water. Place in a large bowl. Cut the broccoli into bite size pieces, removing any tough stems. Add the broccoli, bacon, red onion, golden raisins, sunflower seeds and cheese to the large bowl with the pasta.
In a small bowl, whisk together the mayo, sugar, cider vinegar and garlic powder. Pour over the pasta mixture and stir gently to combine. Place in the fridge for a couple of hours before serving.
