This is such an easy salad to throw together that whenever I need a quick side or a dish to take to a luncheon, I quickly grab these ingredients. This makes a large quantity. We usually have it as the main salad for one dinner, and then it is used to top a lettuce salad the following day. I encourage you to play around by adding other toppings such as sesame seeds and different cheeses.
Clean and cut vegetables in the size of your preference. In a large bowl, whisk together dressing ingredients. Add salad ingredients and stir well. Allow to refrigerate 1 hour before eating.

I had never had fennel before, but when I tasted this salad I absolutely loved it and over the years I have changed the recipe to include Meyer lemons and truffle cheese. It’s really refreshing. The bitterness of the baby arugula with the tart lemon dressing and the salty Parmesan cheese makes it perfect.
