Blueberry, Feta and Quinoa Salad with Lemon Basil Dressing

Description

Quick and healthy vegetarian salad combining sweet, tart blueberries with salty feta cheese. Make in advance for an easy grab and go lunch!

Ingredients

  • 1 whole Lemon, Juice And Zest
  • ¼ cups Extra Virgin Olive Oil
  • 1 teaspoon Dijon Mustard
  • ¼ cups Chopped Fresh Basil
  • 1 pinch Kosher Salt
  • 1 pinch Fresh Ground Pepper
  • 2 cups Cooked Quinoa
  • 1-½ cup Fresh Blueberries
  • ½ cups Crumbled Feta
  • ½ cups Toasted Pine Nuts

Preparation

In a small bowl, whisk together the lemon juice, zest, olive oil, mustard, basil, salt and pepper. Set aside.

In a medium bowl, gently stir together the quinoa, blueberries, feta and pine nuts. Pour the dressing over the quinoa mixture and toss to combine.

Serve immediately or store in the refrigerator in an airtight container for up to two days.
