Description

Black Olive Rosemary New Potato Salad.

Ingredients

  • 1 kilogram New Potatoes (baby Potatoes)
  • 6 sprigs Fresh Rosemary, Leaves Pulled From The Stems And Finely Chopped
  • 3 Tablespoons Olive Oil
  • Salt And Ground Black Pepper To Taste
  • 180 grams Kalamata Olives Sliced Into Quarters

Preparation

Thoroughly wash the new potatoes and pierce each one with a fork. Mix with chopped rosemary leaves and steam or microwave whole with the skins on until tender.

Let the potatoes and rosemary cool a bit before slicing potatoes into quarters. Drizzle olive oil, salt and pepper over potatoes. Gently fold in olives.

Allow to cool to room temperature and serve.
