Description

I look at this salad and it screams summer to me. The colors are bright and so is the taste. I’ve made this for a few family get-togethers and have not had so much as a bean left. Make this!

Ingredients

  • ½ whole Red Onion
  • 1 whole Red Pepper
  • ½ cups Carrots, Shredded
  • 1 can 14.5-oz. Black Beans
  • 1 whole Avocado
  • 3 Tablespoons Olive Oil
  • ⅓ cups Lime Juice
  • ½ teaspoons Ground Cumin
  • 1 teaspoon Garlic, Diced
  • ¼ teaspoons Salt
  • ¼ cups Cilantro, Chopped

Preparation

Dice the red onion and red pepper and throw in a bowl with the shredded carrots. Rinse and drain the black beans and let dry before throwing them in with the rest of the veggies. Chop the avocado and set aside for a second while you make the dressing.

In a separate bowl, combine the olive oil, lime juice, garlic, cumin, salt and cilantro. Mix well and pour over the veggies. Now add the chopped avocado and gently fold it into the salad.

So easy, so good.

I made this for a women’s church meeting as a side salad. The colors are very appealing and the taste is fresh with lime and cilantro. I will make this one again!

Delicious! I added this to a plain green salad; fantastic! Tonight I dipped tortilla chips in it; yummy!

I doubled the recipe and added additional avocado and cilantro to balance everything out. It was very pretty and tasty!
