Description

Black beans, garbanzos and corn tossed with veggies and a delicious cilantro-lime dressing. We love it as a salsa, but it can also be used as a salad or side dish.

Ingredients

  • 1 can Black Beans, Rinsed, Drained.
  • 1 can Garbanzo Beans Drained
  • 2 cups Corn, Frozen Or Canned
  • ½ whole Onion, Finely Diced
  • 2 whole Jalapeno Peppers, Seeded, Minced Or To Taste
  • 1 whole Red Bell Pepper, Diced
  • 1 Tablespoon Chopped Fresh Cilantro
  • ¼ cups Olive Oil
  • 3 Tablespoons Fresh Lime Juice
  • 1/2 Teaspoon Honey
  • Salt To Taste
  • 1 teaspoon Ground Black Pepper

Preparation

In a large bowl, combine all the ingredients. Adjust to taste. Mix well, then refrigerate to allow flavors to blend.

Serve plain, with chips, or warm tortillas.
