Description

Fresh, easy, and fabulous by itself or piled high on hot cheese quesadillas!

Ingredients

  • 2 cans (14.5 Oz Each) Black Beans, Drained
  • 1 whole Bell Pepper, Chopped
  • 1 whole Tomato, Chopped
  • 1 whole Cucumber, Seeded And Chopped
  • ½ whole Medium-sized Jicama, Chopped
  • ½  Red Onion, Chopped
  • 1-½ cup Corn Kernels
  • ¼ cups Fresh Cilantro, Chopped
  • ¼ cups Olive Oil
  • 2 Tablespoons Fresh Lime Juice
  • ¼ teaspoons Kosher Salt
  • ¼ teaspoons Chipotle Chile Powder

Preparation

Combine all ingredients in a large bowl and toss. For best flavor, let sit for 30 minutes before serving.
