Description

This is a 3-pronged hit: tasty, easy, and nutritious! Even the boys will love it! Use in wraps, quesadillas, as salad toppers … just get creative!

Ingredients

  • FOR THE BLACK BEAN AND CORN SALAD:
  • 15 ounces, weight Black Beans
  • 1 cup Frozen Corn, Thawed
  • ½ cups Grated Parmesan
  • 1 whole Zucchini, Cubed
  • ¾ cups Sweet Red Pepper, Diced
  • ½ cups White Onion
  • 3 Tablespoons Chopped Cilantro
  • ½ cups Diced Tomato
  • 1 teaspoon Ground Cumin
  • 1 dash Salt
  • 1 dash Pepper
  • 1 dash Oregano
  • ¼ cups Diced Green Onion

  • FOR THE WRAPS:
  • 8 whole Whole Wheat Tortillas
  • 2 cups Shredded Cheddar Cheese
  • Salsa, To Serve
  • Sour Cream, To Serve

Preparation

Mix all the salad ingredients in a large bowl.

Assemble wraps: 1 tortilla plus 1/4 cup shredded cheddar plus 1/3 cup bean mixture. Roll.

Heat a skillet, spray with cooking spray, place wrap seam side down in the skillet and cook until heated through and cheese is melted, flipping once. Slice in two and top with salsa, sour cream, and/or guacamole as desired!
