Description

Mere words cannot describe the taste of this dressing. My kids will not allow any other caesar dressing in the house. No raw eggs needed.

Cook time is refrigeration time—2 or 3 days ahead is best to make this dressing, but 2 hours or overnight will work.

Ingredients

  • 1 cup Mayonnaise (Best Foods Or Hellmans Please)
  • ¼ cups Grated Parmesan (from The Tub Or Can)
  • 2 Tablespoons Water
  • 2 Tablespoons Olive Oil
  • 1-½ Tablespoon Lemon Juice (fresh Squeezed!)
  • 3 cloves Garlic, Finely Minced
  • 1-½ Tablespoon Anchovy Paste
  • ½ teaspoons Ground Black Pepper
  • 2 teaspoons Sugar
  • ¼ teaspoons Salt
  • ½ teaspoons Dried Parsley Flakes

Preparation

Combine all ingredients in a blender (I use my Magic Bullet) and blend for one minute.

Let sit in the refrigerator for everything to marry for at least 2 hours, preferably two days.

Blend again just before using.

You weren’t kidding…this dressing is so delicious!! We love love love it!! I substituted 6 or 7 real anchovies because I couldn’t find the anchovie paste at the time and it worked perfectly.
