Description

I never get tired of this wonderful summer salad. The dressing is a mixture of sweet and tangy. You can substitute sunflower seeds for the slivered almonds or do a combination of half and half. I sometimes use pine nuts just for a little zip.

Ingredients

  • 1 bunch Spinach
  • 1 container Strawberries
  • 1 whole Avocado
  • ¼ cups Slivered Almonds
  • ¼ cups Sugar
  • ½ Tablespoons Minced Shallot
  • ¼ teaspoons Paprika
  • ¼ teaspoons Worcestershire Sauce
  • ¼ cups Vegetable Oil
  • ⅛ cups Red Raspberry Vinegar

Preparation

Wash, rinse and dry spinach. Remove stems and place in salad bowl.

Wash, rinse and dry strawberries. Remove stems and hull. Slice and add to salad bowl.

Dice avocado and place in salad bowl.

Add slivered almonds.

In separate container, mix sugar (Splenda can be substituted), minced shallot, paprika, Worcestershire sauce, vegetable oil and vinegar. Mix well.

Drizzle salad dressing over salad while tossing ingredients together.

Serve and enjoy!

I tried this for Father’s Day this year, and it was a big hit. I just got invited to dinner and when I asked what they wanted me to bring, they said, “That delicious spinach salad you made for the Father’s Day lunch.” Guess I will be making this again.
