Description

Ok, so Wendy’s Restaurants came out with a summer salad with fruit and chicken in the salad, served with raspberry vinaigrette and it was ok, not bad for a fast food salad. I decided to make my own at home without the chicken and just fresh fruit. It was so good and refreshing! My family gave it 2 thumbs up!

I made a strawberry lime vinaigrette to drizzle on the salad which took this salad to the top!

Ingredients

  • FOR THE SALAD:
  • 1-½ cup Iceberg Lettuce
  • ½ cups Fresh Blueberries
  • 3 cups Fresh Strawberries, Sliced Into Quarters, Divided
  • 2 Tablespoons Feta Cheese, Crumbled
  • ¼ cups Strawberry Lime Vinaigrette
  • FOR THE VINAIGRETTE:
  • 1 cup Lime Juice (about 3 Limes)
  • ¾ cups Extra Virgin Olive Oil
  • 4 Tablespoons Honey
  • 1 Tablespoon Sugar
  • 1 pinch Salt
  • 1 pinch Cracked Black Pepper
  • ½ teaspoons Poppy Seeds

Preparation

For the salad, chop lettuce. Wash blueberries and 1 cup strawberries and slice whole strawberries into quarters.

In a salad bowl or plate, layer lettuce, blueberries, strawberries, feta cheese and drizzle with vinaigrette.

Makes 1 salad.

For the vinaigrette, combine all of the ingredients except the poppy seeds but include the remaining 2 cups of strawberries. Place in blender and blend until smooth, 1-2 minutes. Stir in poppy seeds.

Makes 3 cups vinaigrette.

Shouldn’t there be strawberries in vinegerette? or did I did not see it in the ingriedients

Is something missing from this recipe? I don’t see strawberries listed as a dressing ingredient? Or am I just reading it wrong?
