1. In a large bowl combine corn, black beans, tomatoes and purple onion.
2. In a mason jar combine sugar, vinegar, oil, lime juice, salt, pepper, cumin, parsley and minced garlic. Screw on the lid of the jar and shake dressing until sugar is dissolved.
3. Pour dressing over corn mixture. Stir to combine. Allow salad to marinate 1 hour or so to allow the flavors to combine.
4. Serve with your favorite tortilla chips!
