1. Rinse, core and slice the apple. Dice the cheese. Add the apple, cheese, walnuts and arugula into a salad bowl, toss.
2. To make the vinaigrette: In a small bowl, combine oil, mustard and vinegar and beat with a fork. Season with salt and pepper. Add to the salad just before serving.
