Description

A great recipe for a cold winter day. The smell will make you miss fall but equally love winter!

Ingredients

  • 1 cup Red Quinoa
  • 1 whole Medium Apple
  • 2 sticks Cinnamon
  • ¾ cups Orange Juice
  • 1 cup Water
  • ½ cups Dried Cranberries
  • ½ cups Mandarin Oranges

Preparation

First, rinse the quinoa a few times to get rid of any bitterness. Then, dice your apple. Add the diced apple, quinoa, and cinnamon to a saucepan on medium heat on the stove top. Next, add the orange juice and water. Cover and cook for about 20 to 25 minutes. I ended up cooking mine for a little less time since I like my quinoa a bit crunchy instead of soft. Stir it all together. After 20 or so minutes, remove the cinnamon sticks and add the cranberries and oranges. Simmer over the stove for a few more minutes. Let cool and enjoy.

What is the difference between red and white quinoa? And can I use the white? I bought some about a month ago , and did not even know how to cook it! Thanx
