Description

This is yet another recipe that came about when I was going through my fridge, cabinets and pantry searching for what I could fix to eat. The end result on this occasion turned out to become one of my best dishes ever. Do enjoy it!

Ingredients

  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 can (15 Oz. Size) Cannellini Beans, Rinsed And Drained
  • 1 can (15 Oz. Size) Kernel Corn, Drained
  • ½  Red Bell Pepper, Diced
  • ½  Yellow Bell Pepper, Diced
  • ½  Orange Bell Pepper, Diced
  • 15  Zima Tomatoes (Seriously Sweet Little Orange Tomatoes), Halved, Or Any Grape-style Tomato
  • ¼ cups Canola Oil
  • ¼ cups Extra-virgin Fruity Olive Oil
  • ½ cups Sugar
  • ½ cups Apple Cider Vinegar

Preparation

Place the beans and corn in a large bowl. Add bell peppers and tomatoes.

In a separate bowl, whisk together the canola oil, olive oil, sugar and vinegar; pour over the bean mixture, stirring well. Chill well in the refrigerator prior to serving.
