Light, refreshing alternative for a summer salad. And no mayo to get icky in the heat!
• cook pasta following directions on box.
• dice onion, green bell pepper, and slice all tomatoes in half.
• once pasta is done cooking, drain and rinse with cool water.
• transfer pasta to large bowl and add all ingredients and stir well.
• cover to cool in the refrigerator for at least an hour.

I’ve made this salad at least three times this summer with different veggies from my garden (cucumber, tomato, sweet peppers). It gets lots of compliments and the flavor gets better the longer it sits so it’s an excellent dish to make the day before you want to serve it. Thank you for sharing. I love it!

I had to bring a salad for a work potluck, so I decided to make this. It was wonderful! Everyone loved it at work, and I left some home for mom and dad, they loved it too!

This looked so good that from the moment I saw it on Wednesday when the sit launched I knew I would make it. I made 2 changes I used red and yellow bell peppers and cilantro because I tend to like cilantro more than parsley. It was exactly what I had hoped for and more, this may become my new favorite summer salad. I like it so much I am not sure about it serving 10 people as I keep eating so much of it.

Acini de Pepe was a staple, and favorite, growing up, but then fell to the wayside in adulthood for some odd reason. I’m excited to try this!
