Description

Thinly sliced zucchini are layered with mozzarella, parmesan and prosciutto, then baked to golden-crusty perfection!!

Ingredients

  • 8 whole Zucchini, Peeled And Thinly Sliced Lengthwise
  • 1-½ cup Mozzarella, Sliced Or Shredde
  • 8 slices Prosciutto, Bacon Or Turkey
  • ¾ cups Parmesan
  • ½ cups Bread Crumbs
  • ¾ cups Olive Oil
  • Salt To Taste
  • Pepper To Taste (optional)

Preparation

*Note: Freshly sliced mozzarella is the best bet, but shredded works fine. The original recipe calls for prosciutto, but I have used (cooked) bacon and turkey for this recipe and it turned out wonderful! This might even be tasty with a dollop of sour cream or mascarpone.

Preheat oven to 350 F.

1. Coat a baking dish with olive oil. Place the zucchini slices side by side in the baking dish, covering it entirely but not overlapping.

2. Sprinkle with salt (and pepper to taste, if you like) and parmesan. Situate (or sprinkle, if using shredded) the mozzarella on top, blanketing the zucchini. Place the meat of your choice at this time.

3. Layer with another set of zucchini. Season with salt. For the crust, mix the remaining parmesan and bread crumbs and spoon on top.

4. Drizzle oil on top and bake in the oven for 20 minutes or until crust is golden brown.
