I have a marvelous marinade I made up last summer and have been using ever since. It’s really nice, because you don’t need to marinate in it; it can be used as a glaze, too.
This marinade is great because you don’t actually have to marinate to get the flavor!
Mix everything up and drop in the chicken breasts. Then turn the grill on high. Let it get up to temperature, around 500 degrees or so, then plop the chicken on. Turn down the grill to medium and gently spoon about half of the remaining mixture onto the chicken. Be careful here, as the alchohol will flame up and burn off. Cook for 7 minutes, then flip. Spoon the remaining mixture onto the breasts, again taking care to NOT burn the hair off of your fingers.
This is great because it isn’t a boozy chicken. The booze simply helps the other ingredients to become more liquid and caramelize.
