Description

This is an easy and great all-in-one dinner. Pair it with a great salad and you’ve got a yummy dinner!

Ingredients

  • 1 pound Boneless Skinless Chicken Breasts Cut Into Bite Size Pieces
  • 1 whole Green Bell Pepper, Cut Into Thin Strips
  • 1 whole Red Bell Pepper, Cut Into Thin Strips
  • ½ whole White Onion, Sliced
  • 1 cup Frozen Sweet Corn, Thawed
  • 1-¼ cup Your Favorite Thick-N-Chunky Salsa
  • 1 cup Finely Shredded Mexican Style Cheese
  • 2 cups Whole Wheat Penne Pasta

Preparation

Cook pasta as you normally would.

Meanwhile, in a large nonstick skillet on medium-high heat, cook the chicken for 3 minutes, stirring occasionally. Add the salsa, peppers, onions and corn. (I like my peppers and onions a little more well done, so I saute them beforehand.) Let this boil/simmer for about 10 minutes, stirring occasionally.

Drain the pasta and combine it with the chicken mix. Add about half of the cheese into the skillet and mix well. Turn the heat off. Then sprinkle the rest of the cheese on top.

we tried this tonight and it was VERY good! i put it over rice instead of using pasta and added black beans. YUMMMMMMMMMMMMMMMY!!!!! my daughter really liked it and my husband is excited for the left-overs! thanks for sharing!
