Description

A new twist on an old favorite! This recipe is a go-to during the cold fall/winter months.

Ingredients

  • 1 can (16 Oz. Size) Tomato Sauce
  • 1 cup Ketchup
  • 1 Tablespoon Steak Sauce (I Use A1)
  • 1 Tablespoon Garlic, Minced
  • 1 teaspoon Salt
  • 1 teaspoon White Sugar
  • 6 dashes Worcestershire Sauce
  • 2 pounds Beef Roast
  • 2 whole Medium Onions
  • 8 whole Red Skinned Potatoes
  • 4 whole Large Carrots, Cut Into Large Match Sticks
  • Fresh Parsley For Garnish (optional)

Preparation

Stir together the tomato sauce, ketchup, steak sauce, garlic, salt, sugar and Worcestershire sauce. Pour half of the sauce into a greased (sprayed) crock pot.

Place pot roast on top of the sauce.

Thinly slice the onions and arrange them around the meat. Wash potatoes and add to the pot around the sides of the meat. Wash the carrots, cut into thick matchsticks and place on top of everything. Pour the remaining sauce over the meat, potatoes, onions and carrots.

Cook in the crock pot all day (about 6 to 8 hours) on low.

After it has cooked all day, pour some of the sauce into a small sauce pan. Simmer on medium heat to reduce a bit for a thicker sauce. This is optional but I think it is worth it.

To serve, pour sauce over meat, carrots and potatoes. Top with parsley (optional).

The family enjoyed the added tomato flavors of this pot roast – however, it seemed overwhelmingly tomato-y (just based upon the recipe alone) so I cut the amount of ketchup in half and added more Worchestershire. I also did not add the additional sugar. Next time, will definitely be eliminating the ketchup all together, increasing the steak sauce and possibly introducing beef broth. In general, we enjoyed this meal, but would just tweak it a bit to our tastes. It did come out very moist, the vegetables really took on the tomato sauce well and it was a nice twist on a traditional pot roast.

I wanted to love this, but it just left me wanting more meatiness and depth. It tasted like beef cooked in ketchup and it wasn’t good, and this is coming from a girl who loves ketchup. I even had added extra garlic and wortcheshire ’cause I figured why not, but it didn’t even make a difference. The potatoes were bland, they needed to be cooked seperately with salt and pepper. My fellow eaters did ‘like’ it, but they told me it wasn’t something worth cooking again, not to add it to my recipe box. Sorry, but it just wasn’t a hit.

Delicious! We just finished it, and the menfolk both took hearty seconds. My only change was to boil and mash the red potatoes rather than put them in the crock pot, and I might have put more garlic in than it said… it was HEAVENLY!! Quick, easy, inexpensive, and smelled awesome all day long.
